About Justin Vineyards and Winery, Paso Robles:

Founded by Justin Baldwin in 1981, with vineyards planted in rich limestone soil and the first commercial vintage released in 1986, Justin is famous most of all for its Isoceles — a blend of cabernet sauvignon, cabernet franc, and merlot (first made in 1987) in what is designed to be a Médoc style, a wine that has become arguably the region’s definitive Bordeaux blend (and one, incidentally, that is priced considerably below most Napa Valley wines with similar intentions).

Sauvignon Blanc  

Appellation: Central Coast   

 

Philosophy

Our Sauvignon Blanc reflects the diversity of the climates and soils in the Central Coast that range from the cool, limestone laden Templeton Gap area to the warmer, sandy, river-influenced eastern regions. We’ve combined sauvignon blanc from vineyards in these unique areas to give our JUSTIN Sauvignon Blanc a full palate of bright citrus fruit with a hint of fresh herbs balanced by a crisp, refreshing mineral structure. The result is a wine that is both a refreshing summer aperitif, as well as a perfect food pairing wine for an amazing range of cheeses, seafood or light dining options, such as appetizers or tapas.

Vintage Notes

2017 started with a cold, wet winter that replenished the dry soils throughout Paso Robles after five years of drought. Warmer weather in March encouraged a slightly early bud break late in the month and a few well-spaced showers added to the season’s precipitation totals while the timing mitigated the threat of mildew on the young shoots. May was warm and with the generous moisture contained in the soils, heavy vegetative growth on the vines prompted careful and vigorous canopy management to balance vine development for the coming season. Things turned very hot in June and July with record breaking heat that caused an early veraison in late July. The hot weather continued throughout August causing an earlier than normal start to our sauvignon blanc harvest, but cooling in early September slowed things down a bit, allowing us to harvest various parcels of this variety at different times and with different character to balance the final blend..

Appearance: Very bright, pale straw with silver/green highlights.
Aroma: Lemon, ripe pink grapefruit and ripe pear with subtle white pepper and green herb accents.
Palate: Dry, medium bodied, crisp with lemon and subtle mandarin citrus notes over a pleasant herbal background on entry with savory and mineral textural notes on the mid-palate and into the refreshing finish. This is fresh, classically styled sauvignon blanc that is perfect on a hot summer day before a meal as a refreshing aperitif, with lightly seared and salted Shishito or Padrón peppers, or with freshly grilled shrimp marinated in olive oil, salt, pepper, lemon juice with oregano and served with a white wine, lemon and caper sauce.

Cabernet Sauvignon

Appellation: Paso Robles

Philosophy

With attractive aromas of black fruit and spice, this smooth, ready to drink Cabernet Sauvignon is made with the same care as the highest quality, traditionally crafted Bordeaux styled wines. Our grapes are hand-picked and sorted by the berry for consistent quality and flavor. JUSTIN Cabernet Sauvignon then spends more than a year in traditional small oak barrels to impart depth and complexity, highlighting the influence that our limestone rich soils and unique climate of Paso Robles add to the classic Cabernet character of this exceptional wine.

Vintage Notes

The 2016 vintage started with a warm winter, with near normal precipitation levels. The rain was helpful to replenish the underlying soils a bit for the coming vintage, but not enough to break a five-year drought. The spring was warm, causing an early bud break followed by a cooling period that prolonged the flowering season without negatively affecting pollination, spreading out the season a bit. June and July were warm with veraison only slightly earlier than normal, but lasting a bit longer due to the variable flowering times seen in the spring. August stayed warm through early September when things cooled a bit, allowing the remaining fruit

to continue to develop beautifully through September and October balancing ripeness and maturity in our cabernet sauvignon parcels and giving the balanced character that has defined our JUSTIN Cabernet Sauvignon in each vintage.)

Appearance: Deep purple ruby core, slightly lighter at the rim showing slight staining on the glass.
Aroma: Aromatic with black cherry and blackcurrant fruit, attractive oak and complex cigar box notes with cocoa and a subtle purple floral note.

Palate: Dry, moderate plus bodied, with ripe blackcurrant, black cherry and a touch of red fruit brightness on the entry. Balanced oak, vanilla spice and brioche notes mixed with classic savory cabernet varietal cues mingle on the mid-palate. The finish is moderately long and fresh with sustained rounded fruit and lingering baking spice balanced nicely by firm, smooth tannins. This is a perfect go-to red that’s great with variety of pairings from pasta Bolognese to Wagyu burgers, or try it with a variety of freshly baked wood-fired pizzas. Its versatility is amazing.

Isoceles

Varietal Composition: 76% Cabernet Sauvignon, 13% Cabernet Franc, 11% Merlot

Appellation: Paso Robles

Philosophy

In 1987, we made our first vintage of a wine styled after the famous First Growth producers of Bordeaux, created with the same uncompromising care as the Grands Vins of those venerable chateaux. For more than 25 vintages, ISOSCELES has been our flagship wine and quality benchmark for this style of wine here on the Central Coast of California. A blend based on Cabernet Sauvignon supported by Cabernet Franc and Merlot, the 2015 ISOSCELES shows why Paso Robles such a great place to grow these varieties. While the 2015 ISOSCELES projects the cooler nature of this vintage with ripe red and black fruit and structure that could point to keeping a few bottles in the cellar, it’s so good now that you may want to enjoy a bottle or two right away.

The 2015 vintage started with the warmest winter on record with moderate precipitation. By March, however, it was clear that the drought was not over. Continued warmth through the
Spring caused bud break to occur a few weeks earlier than usual, but a cool late Spring helped slow things down. Wind with some late rain during the critical flowering season in May and June drastically reduced the yield of many varieties throughout the region. July brought heat along with a freak thunderstorm that yielded almost three inches of rain in a day. This provided much needed moisture to our region just before the grapes started to mature and onshore breezes helped eliminate the threat of mildew from the added humidity. Continued good weather and lack of precipitation through September and October gave us a perfect window in which to perfectly ripen and mature our cabernet sauvignon, cabernet franc and merlot blocks. The result is an impressive 2015 ISOSCELES that shows great quality in a balanced, classic style.

Appearance: Dark ruby purple core with a black hue, lighter at the rim and more ruby in color. Moderate plus viscosity with moderate tearing and light staining on the glass.
Aroma: Very aromatic, complex and layered with vibrant red cherry, ripe black cherry and blackcurrant fruit, vanilla and cinnamon spice, with camphor and licorice, savory cigar box notes and an attractive, youthful toasted oak underpinning.

Palate: Dry and full bodied, layered with red and black cherry, cassis and complex baking spice on the entry. Sweet tobacco and classic savory pencil-like notes of cedar and graphite with a little cocoa emerge on the crisp mid-palate with firm chewy tannins lasting into a long, complex finish that shows a parade of fruit and spice balanced with constantly evolving textures and savory notes. Try the 2015 ISOSCELES right now with a simply seasoned oak grilled prime ribeye steak, or wait a few years to enjoy its added complexity with the layered flavors of slowly braised lamb shanks.

Justification

Varietal Compostion: 52% Cabernet Franc, 48% Merlot

Appellation: Paso Robles

Philosophy

With JUSTIFICATION, the Old World meets the New with a blend of Cabernet Franc and Merlot. This wine expresses the spirit of a few right bank Bordeaux producers who highlight Cabernet Franc with its complex expression of herbs, red fruit and elegant structure, only with a Paso Robles twist of full, mature fruit. A versatile pairing wine to a wide range of foods, JUSTIFICATION is perfect for a romantic dinner in front of a crackling fire or a summer’s evening BBQ.

Vintage Notes

The 2015 vintage started with the warmest winter on record with moderate early precipitation and a dry January and February that made it clear that yet another year of drought was coming. Spring stayed warm with bud break occurring a few weeks earlier than usual, but cooler weather slowed things down. Wind with late rain during the critical flowering season in May and June reduced our Cabernet yields considerably. July brought heat along with a freak thunderstorm on the 19th that yielded almost three inches of rain, providing much needed moisture to our region just before the grapes started to mature, while warmer temps and onshore breezes immediately eliminated the threat of mildew from the added humidity. Continued heat and lack of precipitation through September and October gave us a great window to pick our Cabernet Franc and Merlot fruit used for the 2015 JUSTIFICATION at the perfect time.

Appearance: Dark ruby purple core with a medium rim and slight staining on the glass.Aroma: Aromatic red and black cherry and blackcurrant fruit, complex barrel spice of vanilla,

licorice and cinnamon, and subtle dried leaf, cedar and camphor notes.

Palate: Full bodied, fresh with red and black fruit and baking spice on entry with savory fall leaves, cedar pencil and leather meeting sustained sweet spice on the midpalate. The finish is long and complex with wild cherry, camphor and savory elements wrapped in firm, balanced tannins. This is an elegant, wonderfully balanced wine that mixes complex fruit and savory elements with generous texture, all while staying fresh on the palate. The 2015 JUSTIFICATION is a versatile food pairing wine with an affinity for game fowl like pan seared duck breast or roasted pheasant, but is equally at home with a prime filet mignon served with a dollop of garlic and herb butter.

Philosophy

A unique blend that combines the distinctive characteristics of Syrah and Cabernet Sauvignon, the two most highly regarded red grape varieties grown in Paso Robles. The 2016 SAVANT exhibits the depth and complexity that Paso is famous for, while still displaying the elegant, food friendly JUSTIN style. Rich, with full ripe black fruit, spice and smoky meaty elements, it’s a wine that lovers of bold wines will love, while still being classy enough to display exquisite table manners, pairing well with a wide variety of food.

Appearance: Nearly opaque purple/ruby core with blue/black secondary hue, lighter at the rim with thick, moderately stained tears in the glass.
Aroma: Aromatic with ripe black cherry, blackcurrant and boysenberry with vanilla and cin- namon spice and oak with a little smoke, dusty autumn leaves, leather, cracked pepper and cocoa.

Palate: Dry and full-bodied with black fruit and baking spice on entry with more savory leather, smoke and oak character with subtle dried herbs on the mid-palate. The finish is long, clean and textured with lingering cherry and berry fruit, leather matched by chewy, chalky tannins that linger as the finish fades. The 2016 SAVANT has the bold character of a Paso Syrah mixed with the stately elegance that Cabernet brings to the blend and pairs perfectly with a wide variety full flavored dishes like barbeque ribs, grilled veggies with herbs, or braised beef
